As of today we will have ossobuco back on the menu. This iconic dish from Lombardy has always been one of the favourites among our customers whenever we have had it on the menu.
Ossobuco was originally cooked in winter on charcoal or wood stoves and is the perfect dish to warm you up in the cold winter months. Ossobuco means hollow bone in English and is traditionally made using veal shank. The meat is slowly braised until it falls off the bone and can be eaten with a fork alone. A great ossobuco should be both tender and juicy. It will be on the menu until the end of March.
Today, the 5th of February, we are kicking off our second regional week of 2018 with food and drink from Le Marche. Marche cuisine is influenced by it’s neighbouring regions, Lazio and Umbria - but also by the region’s main geographic features, the coastal plains and highlands. Food in the rural parts is deeply rooted in the land, with fresh egg pasta, beef, pork and rabbit. Whilst the coastal food features seafood and tasty broths. Our menu includes stuffed rabbit and pizza Rossi.
This week we are delighted to announce the first of our regional weeks for 2018. We are starting our regional focus on Italian cuisine by introducing a selection of delicious dishes from Lombardia. The week will run from the 8th until the 14th of January.
This region is well known for its rich and decadent cuisine with roots in many different cultures. Sloping down from the southern parts of the Alps and into the Italian lakes, Lombardia lends itself well to rearing meat, and you will find many rich meat dishes in the region. The Lombard cuisine typically uses a lot less pasta than the other regions of Italy, and instead there is more rice, polenta and buckwheat.
Our Lombardia menu features dishes like this rustic Bruschetta con Taleggio e Pasta Tartufata, a deliciously golden Risotto Zafferano e Salsiccia and the famous Ossobucco alla Milanese. You can see the full menu here.
The geography and climate of Lombardia also lends itself really well to making interesting wines and we have found two excellent wines from Lombardia to serve with our menu. The Castello di Cigognola is a soft, pale white wine with a subtle hint of spices. And the “Costa Bassa” Valtellina Superiore Nebbiolo is an elegant, oak aged classic red made with 100% Nebbiolo grapes.
